My Grandma’s Authentic Slovak Bábovka (Marble Cake)👵

A Family Tradition

This Bábovka is basically the heart of my family’s kitchen. We’ve been baking it for three generations now—starting with my grandma, then my mom, and now me. It’s one of those recipes that just smells like home the second it hits the oven, and it’s been our go-to dessert for as long as I can remember.

How is it so fluffy?

The secret to getting it so light is all in the egg whites. My grandma always taught me to whip them until they’re so stiff they won’t fall out of the bowl (even if you flip it over your head!). Gently folding them into the batter at the end is what makes it so much softer and airier than a regular cake.

Creating the Marble

I love the part where you add the cocoa swirl. It’s so satisfying to layer the white and chocolate batters and use a toothpick to make those messy patterns. Every bábovka comes out with a different design inside, so it’s always a fun surprise to see how the marble looks once you finally slice into it.

My Grandma’s Authentic Bábovka (Slovak Marble Cake)

This recipe is a huge piece of my heritage, and I’m happy to finally share a taste of my home with you all! 😉 We’ve been using this recipe for three generations—my grandma, my mom, and now me. It's a classic Slovak marble cake that's been perfected over decades.

Ingredients
  

  • 2 ⅔ cup (400g) semi-coarse flour (do not pack the flour down if using cups! Scoop it into your measuring cup and level it off with a knife)
  • 3/4cup + 2tbsp (200g) butter (room temperature)
  • 1 ¼cup + 2 tbsp (200g) powdered sugar
  • 2 eggs
  • 1 cup (250ml) milk
  • 2 ½ tsp (one packet-12g) baking powder
  • 1 (8g) vanilla sugar packet (or add couple drops of vanilla extract)
  • 1 tbsp cocoa powder (plus an extra ½ tbsp if you want it darker)

Method
 

    Before you start, i really recommend using a scale for the ingredients 😉
  1. The Oven: Preheat your oven to 175°C.
  2. Cream the Base: Whisk the room-temperature butter with the powdered sugar and egg yolks until creamy.
  3. The Batter: Add the milk, flour and baking powder. Mix gently, do not overmix.
  4. Egg whites: In a separate bowl, whisk the egg whites with an electric mixer until stiff peaks form, then gently fold them into the main batter.
  5. Stellka’s Tip: To know if your egg whites are perfectly whipped, carefully flip the bowl upside down—if the whites stay exactly where they are and don't fall on you, they’re ready!
  6. Create the Marble: Separate about 1/3 of the batter into another bowl and gently fold in the cocoa powder.
  7. Prep the Pan: Grease your bábovka form with cold butter and dust it with semi-coarse flour to ensure it doesn’t stick.
  8. Layering: Pour in half of the white batter. Add all of the cocoa batter on top (you can use a toothpick to create swirls here!). Finish with the remaining white batter (swirl again if you like!) and bake for 50 minutes
  9. Stellka’s Tip: Use the toothpick hack at 50 minutes—stick in a toothpick and if it comes out with just a few moist crumbs, your bábovka is ready 🙂
