Method
- The Oven: Preheat your oven to 175°C.
- Cream the Base: Whisk the room-temperature butter with the powdered sugar and egg yolks until creamy.
- The Batter: Add the milk, flour and baking powder. Mix gently, do not overmix.
- Egg whites: In a separate bowl, whisk the egg whites with an electric mixer until stiff peaks form, then gently fold them into the main batter.
- Create the Marble: Separate about 1/3 of the batter into another bowl and gently fold in the cocoa powder.
- Prep the Pan: Grease your bábovka form with cold butter and dust it with semi-coarse flour to ensure it doesn’t stick.
- Layering: Pour in half of the white batter. Add all of the cocoa batter on top (you can use a toothpick to create swirls here!). Finish with the remaining white batter (swirl again if you like!) and bake for 50 minutes
Before you start, i really recommend using a scale for the ingredients ;)
Stellka’s Tip: To know if your egg whites are perfectly whipped, carefully flip the bowl upside down—if the whites stay exactly where they are and don't fall on you, they’re ready!
Stellka’s Tip: Use the toothpick hack at 50 minutes—stick in a toothpick and if it comes out with just a few moist crumbs, your bábovka is ready :)
