My Homemade Greek Tzatziki is one of those recipes that I make almost every single week. It is a simple mix of shredded cucumber and creamy Greek yogurt. Homemade Greek Tzatziki

My Homemade Tzatziki is a refreshing, high-protein staple that works with almost any meal. It’s a simple blend of creamy Greek yogurt, shredded cucumber, and fresh herbs that tastes much better than anything from a store.

Ingredients
  

  • ~1 cup (~290g) cucumber (shredded and squeezed very dry)
  • 1/2 cup Greek yogurt
  • 1 garlic clove (minced)
  • finely chopped fresh dill (to taste) (approx. 1tsp)
  • finely chopped fresh parsley (to taste) (approx. 1tsp)
  • 1 tbsp olive oil
  • 1/2 tsp lemon juice
  • a bigger pinch of salt (to taste)

Method
 

  1. Prep the Cucumber: Shred the cucumber using a box grater. Place it in a clean kitchen towel or fine-mesh sieve (or you can just use a paper towel) and squeeze out as much water as possible.
  2. Combine: Mix in the Greek yogurt with the minced garlic, olive oil, lemon juice, finely chopped herbs and salt until everything is combined. Store in the fridge and enjoy ;).
  3. Stellka’s Tip: When buying your yogurt, make sure it is Plain Greek Yogurt. Avoid regular yogurt, as it’s too thin and will make your tzatziki runny even if you squeeze the cucumber perfectly!
    Stellka’s Tip: Don't skip the squeezing step! Getting the cucumber dry is what keeps the tzatziki thick and creamy instead of watery ;).
