- Prep the Cucumber: Shred the cucumber using a box grater. Place it in a clean kitchen towel or fine-mesh sieve (or you can just use a paper towel) and squeeze out as much water as possible.
- Combine: Mix in the Greek yogurt with the minced garlic, olive oil, lemon juice, finely chopped herbs and salt until everything is combined. Store in the fridge and enjoy ;).
Stellka’s Tip: When buying your yogurt, make sure it is Plain Greek Yogurt. Avoid regular yogurt, as it’s too thin and will make your tzatziki runny even if you squeeze the cucumber perfectly!
Stellka’s Tip: Don't skip the squeezing step! Getting the cucumber dry is what keeps the tzatziki thick and creamy instead of watery ;).
