Method
 

  1. Preheat: Preheat the oven to 220°C.
  2. Seasoning mix: In a small bowl, combine the diced tomato, minced garlic, diced onion, chopped coriander, paprika, salt, pepper, and marjoram.
  3. Prep the chicken: Drizzle a bit of olive oil onto the chicken and spread it evenly with your hands. Massage in the seasoning mix, taking your time to coat every bit of the chicken evenly — this step matters.
  4. First bake: Place the chicken on a wire rack over a tray, and bake for 40-45 minutes.
  5. Stellka's Tip: The wire rack is key here — it lets the heat circulate all around the chicken so the skin actually crisps up, instead of sitting in its own juices and going soggy on the bottom 😉
  6. Make the glaze: While the chicken cooks, make the BBQ glaze — combine the BBQ sauce, sesame seeds, water, honey, brown sugar, and chili (if using).
  7. Lower the temperature and glaze: Reduce the oven to 190-200°C. Evenly glaze the top of the chicken and bake for another 15 minutes.
  8. Glaze again: After 10 minutes, glaze both sides evenly.
  9. Final bake: Bake for another 10-15 minutes, or until a thermometer inserted into the thickest part reads at least 74°C (for safety) — for that fall-off-the-bone texture, aim closer to 88-90°C. Once out of the oven, brush on a final layer of the sauce.
  10. Serve: I had mine with broccoli, edamame (plus parmesan), Greek yogurt, pickled cucumber, and topped with fresh coriander. Enjoy 😉
