Simple Spring Asparagus & Pea Salad🌿

The secret to this warm salad is the combination of buttery sautéed onions and a quick simmer. It creates a silky, savory glaze that coats every pea and asparagus spear, making it feel like a fancy restaurant side dish made in just 15 minutes.

Ingredients
  

  • 1 cup (200g) asparagus
  • 1 cup (200g) frozen or fresh peas
  • 1/2 onion
  • 1/4 cup (25g) parmesan cheese
  • 1 tbsp butter
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1/2 tsp oregano
  • 3-4 tbsp water

Method
 

  1. Prep Veggies: wash and trim the woody ends off your asparagus, then cut the spears into bite-sized pieces (approx. 2–3 cm).
  2. Slice Onion: thinly slice your onion into delicate half-moons. If you are using whole snap peas, chop them into bite-sized pieces to match the size of the asparagus.
  3. Sauté Base: melt a knob of butter in a wide pan over medium heat. Add the onions, asparagus, and peas. Sauté for approx. 5 minutes until the veggies are vibrant green.
  4. Steam Gently: pour in a splash of water and let the mixture simmer until the liquid has mostly evaporated. This ensures the veggies are perfectly cooked through while staying juicy.
  5. Season & Melt: sprinkle in your salt, pepper, garlic powder, oregano and half of the Parmesan cheese. Stir well and let it roast for another 2 minutes until the cheese is melted.
  6. Serve Warm: serve straight from the pan for a cozy lunch, or let it cool for a fresh salad vibe. Top with the remaining Parmesan and enjoy! 😉
