Banana Waffles

Naturally sweet banana waffles with a light, cloud-like texture. A simple recipe optimized for a golden crunch and a soft, fluffy center ;)

Method
 

  1. Oven: Preheat your waffle iron.
  2. In a large bowl, mash up your bananas and mix in the egg. Whisk until light and fluffy for approx. 1 minute.
  3. Wet ingredients: Add in the rest of the wet ingredients (yogurt, coconut oil, vanilla extract, milk, and coconut sugar).
  4. Dry ingredients: Mix in your dry ingredients (flour, cinnamon, baking soda, baking powder, and a pinch of salt). You can add in chocolate chips or nuts if you want!
  5. Cook: Pour about 2 scoops of batter for each waffle and cook until golden brown (approx. 5 minutes). Keep an eye on them and enjoy ;)
  6. Stellka's Tip: For the crispiest waffles, don't stack them while they're hot! Place them in a single layer on a cooling rack for 1 minute before serving so they stay perfectly crunchy on the outside.
