Caramel Date Bites

A tiny, decadent sweet treat that tastes like a luxury caramel chocolate bar. This bite combines the natural caramel sweetness of a fresh date with a salty, crunchy peanut butter center and a crisp dark chocolate shell. It’s the perfect 5-minute solution for a sweet craving or a perfect pre-workout or post-workout snack!

Ingredients
  

  • 1 fresh date
  • 1 tsp crunchy peanut butter
  • 1-2 almonds
  • couple of dark chocolate chips
  • A bit of coconut oil (or butter or whatever you have on hand)
  • 1 pinch of sea salt

Method
 

  1. Fill: Slice open the fresh date and remove the pit. Fill the center with the crunchy peanut butter and tuck one or two almonds inside. Put into the freezer for 3 minutes to firm up.
  2. Melt: While the date chills, melt a few dark chocolate chips with a tiny drop of coconut oil until smooth.
  3. The Coat: Take the date out of the freezer and drizzle the melted chocolate over the top. Immediately sprinkle with crushed almonds and flaky sea salt.
  4. The Salt Factor: Don't skip the flaky sea salt—it’s the secret ingredient that cuts through the sweetness of the date and makes the peanut butter flavor truly "pop."
  5. The Snap: Freeze for 2 more minutes until the chocolate shell is hard and enjoy that perfect "crack" when you bite in! ;)
  6. Nut Variations: If you don't have almonds, these are equally delicious with a pecan or a walnut tucked inside.
