Method
- Preheat: Preheat oven to 180°C (350°F).
- Whip the Base: With a mixer, beat the eggs and powdered sugar until pale and fluffy, 4-5 minutes.
- Add the Apples: Peel and shred the apples (large holes on the grater). Add to the batter with oil and ground walnuts. Mix with a spatula until combined.
- Add Dry Ingredients: Add flour, baking soda, cinnamon, nutmeg, and salt. Fold in until just combined.
- Prep & Pour: Grease pan with butter and flour (or line with parchment). Pour in batter and spread evenly. I used a 33x25cm pan.
- Bake: Bake for 25-35 minutes. Let the cake cool completely before frosting.
- The Cream: Whip cold heavy cream to stiff peaks, adding powdered sugar halfway through. Mix in mascarpone (and vanilla if using) for a few seconds, until just combined.
- Assemble: Spread cream over the cooled cake, drizzle with caramel, and top with crushed walnuts. Enjoy! ;)
Stellka's Tip: No ground walnuts? Blend for a few seconds or chop finely.
Stellka's Tip: Use the toothpick test — insert a toothpick into the center, and if it comes out clean (or with just a few moist crumbs), it's done.
