Carrot Ribbon Salad🥕

If you are looking for a quick, vibrant side dish that delivers an incredible crunch with minimal effort, this carrot ribbon salad is the perfect choice. By using a standard vegetable peeler, you can turn a humble carrot into beautiful, thin ribbons that soak up a savory dressing perfectly. Tossed with rich sesame oil, tangy rice vinegar, sharp garlic, and a hint of sweet cane sugar, it is a refreshing addition to any dinner table.

Ingredients
  

  • 1 large carrot
  • 1/2 spring onion (the dark green part)
  • 1 minced garlic
  • 2 tsp soy sauce
  • 1 1/2 tsp sesame oil
  • 1 1/2 tbsp brown or white rice vinegar
  • 2 1/4 tsp cane sugar
  • sesame seeds (to taste)

Method
 

  1. Prep the Carrot: First, peel your large carrot. Place it flat on a steady cutting board.
    Take your wide hand peeler and press down firmly against the carrot. Shave long, wide ribbons across the entire length from top to bottom and add them to a bowl.
  2. The Aromatics: Add in the minced garlic, chopped spring onion (the dark green part), soy sauce, sesame oil, vinegar, cane sugar and sesame seeds to taste. Mix well and enjoy ;)
