Method
- Soak the Dates: Let the dates soak in boiling water for approximately 10 minutes while you prepare the base.
- Blend the Base: In a blender, blend oats and almond flour together. (If using oat flour and almond flour, skip this blending step)
- Add the Rest of the Base: Add melted coconut oil and maple syrup to the blender and blend again until very well combined.
- The Base:Â Line your pan with parchment paper. Press the base mixture down firmly so it's evenly distributed across the bottom.Place the pan in the freezer while you make the caramel layer.
- The Caramel: In a blender, blend the drained dates, peanut butter, vanilla extract, and a pinch of salt until smooth and caramel-like — a few small date chunks left in the mix are totally fine if you like a bit of texture.
- Add the Caramel:Â Pour the caramel over the chilled base and spread evenly. Use a toothpick to make pretty swirls if you like.Place the pan back in the freezer while we melt the chocolate.
- The Chocolate: Melt the dark chocolate, together with the coconut oil in the microwave in 15 sec. bursts. Pour the melted chocolate evenly over the caramel.
- Freeze: Freeze for at least 50 minutes before slicing and enjoy ;)
Stellka's Tip: Feel free to get creative with the topping — crushed nuts and sea salt are my go-to, but shredded coconut, a drizzle of extra peanut butter, or even some sprinkles would work great too ;)
