Healthy Twix Bars🍫

These healthier Twix bars swap refined sugar for a naturally sweet date caramel, layered over a nutty oat and almond base and coated in dark chocolate. No-bake, freezer-set, and just as satisfying as the real thing - maybe even better ;)

Method
 

  1. Soak the Dates: Let the dates soak in boiling water for approximately 10 minutes while you prepare the base.
  2. Blend the Base: In a blender, blend oats and almond flour together. (If using oat flour and almond flour, skip this blending step)
  3. Add the Rest of the Base: Add melted coconut oil and maple syrup to the blender and blend again until very well combined.
  4. The Base: Line your pan with parchment paper. Press the base mixture down firmly so it's evenly distributed across the bottom.
    Place the pan in the freezer while you make the caramel layer.
  5. The Caramel: In a blender, blend the drained dates, peanut butter, vanilla extract, and a pinch of salt until smooth and caramel-like — a few small date chunks left in the mix are totally fine if you like a bit of texture.
  6. Add the Caramel: Pour the caramel over the chilled base and spread evenly. Use a toothpick to make pretty swirls if you like.
    Place the pan back in the freezer while we melt the chocolate.
  7. The Chocolate: Melt the dark chocolate, together with the coconut oil in the microwave in 15 sec. bursts. Pour the melted chocolate evenly over the caramel.
  8. Stellka's Tip: Feel free to get creative with the topping — crushed nuts and sea salt are my go-to, but shredded coconut, a drizzle of extra peanut butter, or even some sprinkles would work great too ;)
  9. Freeze: Freeze for at least 50 minutes before slicing and enjoy ;)
