Keeping the Fillings Balanced

For the fillings, I layer on a few slices of ham and a quick handful of whatever fresh veggies I have sitting in the fridge drawer. The mix of crisp lettuce, chopped cucumbers, tomatoes, and bell peppers adds the perfect crunch to this breakfast wrap, but the real trick is not overstuffing the wrap so you can actually fold it. There is nothing worse than a breakfast burrito exploding all over your hands while you are trying to eat, so keeping the vegetable portions small is key to a clean fold.

Crispy Pan Trick

The absolute game-changer step in this whole recipe is taking the rolled tortilla and throwing it directly onto a hot, dry frying pan for just a minute or two. Heating it on high heat toasts the outer layer to a beautiful golden brown and instantly seals the edges shut so nothing falls out while you eat. It gives the wrap this amazing, crunch that makes it more enjoyable.

Customize It To Your Liking 🙂

The best part about this breakfast wrap is that there are really no strict rules, so you can customize the ingredients based on whatever you happen to be craving that day. You can easily swap the ham for turkey or salami, throw in some sliced avocado for healthy fats, or drizzle a little sriracha on top if you prefer a spicy morning kick. It is just a super easy, reliable recipe that proves you don’t need a ton of time or complicated cooking skills to make a genuinely delicious breakfast.

Nutrition

Vegetables like tomatoes, and bell peppers are packed with concentrated vitamins (like Vitamin C and A). Even a few fresh slices give your body an instant dose of nutrients that a plain bagel or cereal simply can’t offer.

Cottage cheese is incredibly protein-dense. Just one or two tablespoons still give you a solid few grams of clean protein, which stabilizes your blood sugar right when you wake up (plus more protein from the ham).

Breakfast Wrap🌯

My absolute go-to recipe when I need a quick, healthy breakfast before rushing out the door. It takes less than ten minutes to toss together, but toasting it in the pan changes everything—it makes it super crispy and keeps all the fresh ingredients locked inside.

Ingredients
  

  • 1 large tortilla
  • 1-2 tbsp cottage cheese (or any kind of spread you like)
  • 3-4 slices of ham
  • 2 slices of cheese (I used Eidam)
  • 1 handful of lettuce
  • few pieces of chopped tomatoes
  • few slices of chopped cucumbers
  • a few strips of bell pepper

Method
 

  1. Spread: Lay your tortilla flat and evenly spread the cottage cheese or Greek yogurt across the center.
  2. Stellka's Tip: You can make a delicious green goddess dressing by just blending cottage cheese / Greek yogurt with fresh lime juice, garlic, olive oil, parsley, salt and black pepper 😉
  3. Layer the ham: Place your slices of ham and cheese neatly on top of the spread.
  4. Add the veggies: Pile on your handful of fresh lettuce, followed by the chopped cucumbers, tomatoes, and bell peppers.
  5. Fold it tight: Fold the sides inward and roll the tortilla tightly away from you to keep all the fillings secured.
  6. Toast to seal: Heat a clean, dry frying pan on high heat. Place the wrap seam-side down first, then toast on all sides until golden and crispy.
  7. Cool and serve: Remove from the pan, let it cool for one minute so it stays crunchy, slice in half, and enjoy! 😉
