Crunchy Asian Cucumber Salad

This salad features crisp, thinly sliced cucumbers tossed in a beautiful dressing of savory soy sauce, tangy rice vinegar, and a hint of sweetness. Finished with aromatic sesame oil and a sprinkle of golden sesame seeds, it’s a light yet flavor-packed dish that satisfies your cravings🥒.

Ingredients
  

  • 1/2 large cucumber (~200g)
  • 2 tsp soy sauce
  • 2 tbsp white rice vinegar (any kind is fine)
  • 1 tsp cane sugar (use can use granulated sugar too)
  • 2 tsp sesame oil
  • you can add sesame seeds for more flavor 🙂

Method
 

  1. Slice: Thinly slice your cucumber and place it in a small bowl.
  2. Mix: In a separate cup, whisk together the soy sauce, vinegar, sesame oil and sugar until the sugar dissolves. (Or if you’re feeling lazy just mix it right into the bowl of cucumbers 😉
  3. Toss: Pour the dressing over the cucumbers and toss well to coat and add sesame seeds. Enjoy 😉
  4. Stellka’s Balancing Tip: If you accidentally add too much vinegar, don't worry! You can easily cancel out the extra acidity by adding a little more sugar until the flavors are perfectly balanced again.
