Ingredients
  

  • 1 slice of bread
Egg Salad
  • 1 egg (hard boiled)
  • 1 medium finely chopped pickled cucumber
  • ~1 tsp of the pickle juice
  • ~2 tbsp cottage cheese
  • ~1 tbsp Greek yogurt (or mayo)
  • ~1 tsp whole grain mustard
  • ~1/4 tsp Dijon mustard (optional)
  • ~1/4 tsp honey
  • fresh dill, salt and pepper to taste

  • 1 handful lettuce (shredded)
  • 1 thinly sliced radish
  • ~3 cherry tomatoes
  • 1/4 red bell pepper

  • 1/2 tsp olive oil (optional)
  • salt and pepper to taste
  • plus fresh peas on the side

Method
