There is something so special about the smell of browned butter filling the kitchen. It’s the first step in my recipe and truly the most important. By taking those few extra minutes to let the butter turn golden and nutty, you’re upgrading a simple banana muffin into a gourmet, curated treat that tastes like it came from a high-end bakery.

The “Cloud-Like” Texture

To get that perfect moist and fluffy texture, I’ve added a secret weapon: Greek yogurt. It works together with the mashed bananas to keep the crumb incredibly moist and soft. These muffins don’t just taste good—they feel light and cloud-like, making them the perfect companion for your morning coffee or a quiet afternoon.

A Balanced Sweetness🍫

I love using a blend of light brown sugar and coconut sugar here. The coconut sugar adds adeep caramel-like richness without being overpowering. Combined with the dark chocolate chips and a hint of cinnamon, you get a balanced sweetness that feels light and satisfying rather than heavy.

Moist Banana Bread Muffins

Ingredients
  

Dry ingredients
  • (150g) all-purpose flour
  • 1 pinch of salt
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • (50g) chopped dark chocolate (or chocolate chips)
Wet ingredients
  • 2 large very ripe bananas
  • (40g) light brown sugar
  • (40g) coconut sugar
  • 1 egg
  • (30ml) milk
  • (60g) browned melted butter (you can use normal melted butter too)
  • 1 tsp vanilla
  • 1 tbsp Greek yogurt/sour cream (room temperature)

Method
 

  1. Bake: Preheat your oven to 180°C (350°F).
  2. Prep the Dry Mix: In a separate bowl, whisk together the flour, salt, baking powder, baking soda, and cinnamon. Stir in the dark chocolate chunks so they are well-coated.
  3. The Banana Base: In a large mixing bowl, mash the bananas until smooth.
  4. Sweeten: Add the light brown sugar and coconut sugar, whisking until well combined.
  5. Wet Ingredients: Add the egg, milk, browned butter, vanilla, and Greek yogurt. Whisk until the mixture is silky.
  6. Combine: Gently fold in the dry ingredient mix. Stop as soon as you don't see any more flour—do not overmix if you want that moist and fluffy texture!
  7. Bake: I made 16 smaller muffins, but you can definitely make them bigger if you prefer! Just remember that larger muffins will need to bake for a bit longer. Start checking them at the 17-minute mark and keep an eye on them. Enjoy 😉
  8. Stellka’s Tip: Insert a toothpick into the center of a muffin—if it comes out clean or with just a few moist crumbs (and no wet batter), take them out immediately. It’s the best way to ensure they’re never overbaked and stay moist!
