Method
- Bake: Preheat your oven to 180°C (350°F).
- Prep the Dry Mix: In a separate bowl, whisk together the flour, salt, baking powder, baking soda, and cinnamon. Stir in the dark chocolate chunks so they are well-coated.
- The Banana Base:Â In a large mixing bowl, mash the bananas until smooth.
- Sweeten:Â Add the light brown sugar and coconut sugar, whisking until well combined.
- Wet Ingredients: Add the egg, milk, browned butter, vanilla, and Greek yogurt. Whisk until the mixture is silky.
- Combine: Gently fold in the dry ingredient mix. Stop as soon as you don't see any more flourâdo not overmix if you want that moist and fluffy texture!
- Bake: I made 16 smaller muffins, but you can definitely make them bigger if you prefer! Just remember that larger muffins will need to bake for a bit longer. Start checking them at the 17-minute mark and keep an eye on them. Enjoy đ
