Refreshing Coconut Balls🥥

Nature’s Digestive Support

One of the best “hidden” benefits of these coconut balls is the fiber content. Coconut is naturally high in fiber, which keeps your digestion happy and leaves you feeling light and satisfied.

The “Cloud-Like” Protein Hack

By using Greek yogurt as the base, I’ve created a center that is light, airy, and supports a natural glow. Unlike store-bought sweets, these are packed with healthy fats from the coconut and dark chocolate, providing steady energy without the sugar crash.

If you want to boost the stats even further, you can easily add a scoop of your favorite vanilla protein powder directly into the base! It makes the texture slightly thicker and even more satisfying for a post-workout snack.

Totally Customizable

I love the idea that one simple base can turn into a whole chocolate box. By hiding different fruits and nuts inside, you create a beautiful variety of textures and flavours. From the tartness of fresh strawberries to the caramel-like sweetness of dried mango, every bite is a new surprise that makes your healthy snack time feel like a high-end experience.

One of the best things about these Coconut Clouds is that they are a total blank canvas! Whether you want to hide a ‘surprise’ in the center or experiment with different toppings, there are endless ways to make this recipe your own. From fruity and fresh to nutty and indulgent, here are some of my favorite ways to mix up the flavors (place a tiny piece of the ‘filling’ on top of the chocolate so you know exactly what flavor they are!) :

Refreshing Coconut Balls

My healthy Coconut Balls are my favorite way to enjoy a luxury 'boutique' treat that still feels light. Optimized with high-protein Greek yogurt and naturally sweetened with honey, they have a creamy, cloud-like center that contrasts perfectly with a snappy dark chocolate shell.
Prep Time 5 minutes
Freezing time 10 minutes
Total Time 15 minutes
Servings: 12 balls
Calories: 42

Ingredients

  • ~5 tbsp (75g) yogurt (coconut, plain, vanilla…) (I used high-protein Greek yogurt)
  • ~11 tbsp (55g) shredded coconut
  • 2 tsp honey/maple syrup
  • couple drops of vanilla
  • some chocolate chips (for the coating)
  • a bit of coconut oil (for the coating)
  • sprinkle of sea salt

Method

  1. The Base: In a small bowl, stir the yogurt, honey, vanilla, and shredded coconut all together.
  2. If the mixture feels dry, add more yogurt! Or if it feels too wet, add more coconut in. You can optimize it to your liking. Add more honey or add some topping in the mixture, 😉
  3. Form the Bites: Roll the mixture into 12 even balls using your hands. Place them on a plate lined with parchment paper and while we melt the chocolate place them in the freezer.
  4. You can create a whole collection of flavors from one simple base! By hiding a piece of fruit or a nut inside, every bite becomes a little surprise.
  5. Melt: Gently melt the dark chocolate with the coconut oil (you can use a microwave in 20-second bursts or a double boiler). The oil makes the coating extra silky and shiny.
  6. The Dip: Using a fork, dip each coconut ball into the melted chocolate until fully coated. Sprinkle some flaky sea salt on top (or some other toppings).
  7. Freeze: Put them in the freezer for about 10 minutes. This gives the chocolate that perfect "snap" while the center stays creamy. Store them in the fridge and enjoy 😉
