There is absolutely no baking required, and you only need a few simple ingredients that you likely already have in your pantry. Keeping a batch of these beautiful, chocolatey dates tucked away in your freezer means you will always have a gourmet treat ready whenever your sweet tooth hits!

Strawberry Date Bites🍓

Method
- Make the Quick Jam: Mash up your strawberries in a small bowl. (If you are using frozen ones, make sure to defrost them first, or pop them in the microwave for a few seconds to soften them up). Stir in the honey and chia seeds, then let the mixture sit and soak for at least 20–30 minutes until the chia seeds double in size!
- Prep the Dates: Meanwhile, cut your fresh dates in half and remove the pits. Place the 6 halves onto a sheet of parchment paper lined on a cutting board, plate, or anything flat that can easily fit inside your freezer.
- Flatten into Discs: Place a small square of parchment paper directly on top of a date half. Press down firmly using the flat bottom of a cup or glass to smash it into a flat, disc-shaped base. Remove the top parchment paper and repeat for all the remaining pieces.
- Layer the Goodness: Spoon approximately 1 tbsp of your homemade strawberry chia jam evenly onto each flattened date.
- The Chocolate Shell: Melt the dark chocolate and coconut oil in the microwave in short bursts, stirring until smooth. Pour approx. 1tbsp of the melted chocolate over the jam, coating it completely to seal the edges.
- Set and Enjoy!: Sprinkle a few flakes of sea salt over the wet chocolate. Pop them into the freezer for about 10 minutes, or simply dive in as soon as that chocolate shell hardens up. Store any extras in the freezer 😉
