Strawberry Date Bites🍓

This is my go-to when I want a sweet treat that actually satisfies my cravings without any artificial sugar. Naturally sweetened, packed with fiber, and incredibly easy to meal prep and store in the freezer for quick snacking ;)

Servings: 6 mini dates

Ingredients
  

  • 3 BIG fresh dates
  • 6 big strawberries (frozen or fresh)
  • 1 tbsp honey
  • 1 tbsp chia seeds
  • ~50 g dark chocolate (for the coating)
  • 1 tsp coconut oil (for the chocolate)
  • a pinch of flaky sea salt (any kind is fine)

Method
 

  1. Make the Quick Jam: Mash up your strawberries in a small bowl. (If you are using frozen ones, make sure to defrost them first, or pop them in the microwave for a few seconds to soften them up). Stir in the honey and chia seeds, then let the mixture sit and soak for at least 20–30 minutes until the chia seeds double in size!
  2. Prep the Dates: Meanwhile, cut your fresh dates in half and remove the pits. Place the 6 halves onto a sheet of parchment paper lined on a cutting board, plate, or anything flat that can easily fit inside your freezer.
  3. Flatten into Discs: Place a small square of parchment paper directly on top of a date half. Press down firmly using the flat bottom of a cup or glass to smash it into a flat, disc-shaped base. Remove the top parchment paper and repeat for all the remaining pieces.
  4. Layer the Goodness: Spoon approximately 1 tbsp of your homemade strawberry chia jam evenly onto each flattened date.
  5. The Chocolate Shell: Melt the dark chocolate and coconut oil in the microwave in short bursts, stirring until smooth. Pour approx. 1tbsp of the melted chocolate over the jam, coating it completely to seal the edges.
  6. Set and Enjoy!: Sprinkle a few flakes of sea salt over the wet chocolate. Pop them into the freezer for about 10 minutes, or simply dive in as soon as that chocolate shell hardens up. Store any extras in the freezer ;)
  7. Stellka’s Tip: If your dates feel a bit firm, just soak them in warm water for 5 minutes before cutting them! This makes them incredibly easy to flatten and gives you that perfect, chewy caramel texture in every single bite :)
